Rice Onion Paratha




This yummy flavor full paratha is a fiber rich recipe with nice crunch of onion. It’s a great option for kids lunch box or just eat in the breakfast or brunch.

Ingredients:

Wheat flour ………  1 ½ cup
Onion (Diced) …...1 medium
Rice ……………3/4 Cup
Yogurt …..1/4 cup
Green chili…………..2 pieces
Red chili …………..1/2 tsp
Cumin Powder……1 tsp
Cilantro…….3 tbsp
Salt to taste
Ghee as required

Method:
1.    Add salt and yogurt in wheat flour and knead a soft dough with help of water.
2.    Cover the dough with wet towel and let it rest for 15 to 20 mins.



For Stuffing

3.    In a bowl add onion, salt, cilantro, green chili, cumin powder and rice and mix everything very nice.
4.    Take a small amount of dough and roll it into 3 inch of puri. Add 2 tsp stuffing in the  middle and gather the dough on the top . Now remove any excess dough and press it gently
5.    Roll the ball with gentle hand to almost 6-7 inches diameter.
6.    Now roast the paratha both the side  on the hot pan with the help of ghee ( you can also use oil).

7.    Serve hot with raita or pickle.

Methi ( fenugreek leaves) Thepla

Eat traditional gujarati thepla healthier way. This is thepla is full of iron, calcium, protein and lots of good nutrients. It can be eaten in breakfast, lunch or dinner.


Ingredients:


1 cup wheat flour
1/2 cup Bajari flour
1/2 Jowar flour
1 table spoon oil
1 Cup Greek Yogurt ( can be replaced with plain yogurt)
1 tsp flax seed powder ( optional)
1 tsp chilli paste
1 tsp garlic paste
1 tsp ginger paste
1 tsp sesame seeds
1 tsp sugar
1 tsp turmeric powder
1 tsp chilli powder
pinch of asofetoeda
salt to taste

Method:

1. Shift three flour together and add flex seeds(optional) in it.
2. Add ginger, garlic, chilli paste. sesame seeds, tuermeric powder, red chillli powder,sugar, asofetoeda and salt.
3. Now add yogurt and start kneading the dough. If you find it hard then add little bit of water in it otherwise just kneed it with yogurt.
4. Roll thepla from the dough with the help of wheat flour for dusting.
5. Heat tava and place thepla on it. Let it cook on one side until you can see little bit of bubble or spot on it.
6. now turn the thepla and apply small amount of oil on cooked side and let it cook for half and minute.
7. Now turn one more time and cook the other side for about half a minute.
8. Serve hot with yogurt or pickle.

This is my way of making healthy thepla.
1. If you don't want to mix the flour then you can just use wheat flour. replace 1/2 -1/2 cups both the flour with wheat flour.
2. If you want to make it gluten free and don't want to use wheat flour at all then replace 1 cup of wheat flour with 1/2 cup bajari and 1/2 cup juwar flour.

Home made Bread ( Step By Step) Basic Recipe.









Ingredients:

3 1/2 cup        All purpose flour ( maida)
1 1/2 tb sp     Sugar
1 tea sp         Salt
1 1/2 tb Sp     Butter
1 package      Active dry yeast
1 cup             Water 
1/4 cup          Milk




Method:
1. First warm a glass bowl by filling up with hot water to it and then dump it out or just put an empty bowl into the microwave for 20 seconds




Now, add a cup of warm water into the bowl with 1 packet of yeast and cover it for 10 minutes



You will get a dark tan color mixture as shown in the picture above.







3. Its time to add the dry ingredients. Add 2 cups of maida, sugar and salt in the tan colored mixture and mix it very well. Now, slowly add milk it to the flour mixture.







4. It is ok if you feel very sticky dough. Add 1-2 tb Sp of flour and start kneading. Gradually add the flour.






5. Now knead your dough with you palm atleast for 10-15 minutes so the you will get  the gluten effect and you bread will get nice soft.




6. Clean the bowl and place the nicely kneaded dough into the bowl.



7. Cover it with damp cloth and keep it aside for 45 minutes.



8. Dough will rise almost double in quantity. Again take it out and knead for 10 minutes.


9. Flat it out with your hand in rectangle shape and height should be the same as your bread pan height.




10. Now make a roll as shown above and grease the bread pan with butter and dust it with flour.




11. Place the roll in the pan. and tuck the open sides down where the seam is. Now take brush the surface with milk and cover it. Let it rest for at least 45 minutes to an hour.



It will get double in quantity after an hour. Now bake in a pre heated oven on 400 degree F for 25 to 30 minutes.



let it cool down in  pan for 10 mintues after taking out from the oven.




12. Take out from the pan and let it completely cool down on a wire rack.



Enjoy your soft, fluffy home made bread. :)

gobi (cauliflower) paratha



Ingredients:
For filling :
Cauliflower /gobi Finely chopped 2 cups
Onion finely chopped 1 cup
Cilantro finely chopped 1 /2 cup
Green chilli paste 1 teaspoon ( or 3-4 green chillis)
Ginger paste 1 teaspoon
Cumin (jeera) powder 1 tea spoon
Salt to taste

For the dough:
3 cups of whole wheat flour
1 ¼ cup of water
1 tb spon oil
Salt to taste
Method:

For the dough.

Mix wheat flour , salt and oil in a bowl. Now add water little by little to make a soft dough. Quantity of water depends upon the wheat flour so make sure to add water slowly. Now keep aside for 10 mins.
For the flling:1.In a large bowl add cauliflour, onion, green chilli paste,cumin (jeera) powder, cilantro, ginger paste and mix it well. Do not ADD SALT.
2. When you are ready to make the paratha then add the salt in the mixture.
3. Take a handful of kneaded dough for each paratha and stuff required amount of cauliflower mixture in the center. Make into round shape and roll each into proper size of paratha.
4. Heat the frying pan and fry both sides
turning over a few times. Add ghee and fry turning over till parathas are well fried. Serve hot with chutney/sauce.
