Cheese Roll | Kids Lunchbox | Tiffin | Bento
Watch Video of Cheese Roll:

8 Burrito style tortilla
8 oz of cream cheese
1 packet of Ranch powder dressing
1 small can of pimentos
8-10 Olives
2-3 green chilies
Small bunch of Cilantro
Method:
1. Take out cream cheese in a bowl and let it Soften at room temperature.
2. Finely chopped pimentos, olives, green chili and cilantro.
3. Mix ranch dressing and other ingredients in cream cheese blend it very well.
4. Apply cream cheese mixture on one tortilla and start rolling from one side. Make sure to roll tightly.
5. Finish applying on all the tortilla. Wrap all the rolls in plastic wrap and keep it in refrigerator for an hour.
6. Take out from the refrigerator and cut in slight angle and decorate in plate.
7. Keep it in the refrigerator and take out when its time to serve.
8. Enjoy with salsa or other dips.

Mixed vegetables .......1 Cup ( Carrot, green beans, edamame, Corn)
Onion..........................1/2 medium (finely chopped)
Potato..........................1/2 medium (finely chopped)
Oil................................1 Tb sp
Mustard seeds..............1 tsp
Cashews and raisin......1 Tb sp
Curry leaves.................4-5 leaves
Turmeric powder.........1 tsp
Chili powder................1/2 tsp
Sugar............................2 tsp
Lemon Juice.................1 tsp
Salt to taste
Method:
1. Wash Poha three to four times and put it aside in colander to drain out the extra water.
2. In a pan take oil and add mustard seeds in it.
3. When mustard seeds start to crackle add sesame seeds, cashews, raisin and curry leaves
4. Add onion and saute nicely. Once onion changes to light pink color add potato and mix vegetables and cook until vegetables get soft.
5. Now add poha into the vegetables mixture and add rest of the masala except lemon.
6. Cook for 3-4 minutes until all the masala nicely mixed.
7. Now switch off the flame and add lemon juice and mix properly. Serve hot.

Jowar Bhakhari, jaggery, potato subzi- kids lunchbox (Tiffin)
Today's lunch menu : Jowar Bhakhari and potato subzi
Wheat-Jowar bhakari
Wheat flour ..................... 1 cup
Jowar flour...................... 1/2 cup
Oil ...................................1 TB spoon
Carom seeds.................... 1/2 Tea spoon
Salt to taste.
Mix all the ingredients and add Luke warm water to the flour mixture. Roll out bhakari / roti from the dough and roast it on tawa. Apply some ghee (optional) on top of bhakhari so it will be stay soft.
Potato subzi
for potato subzi I just add salt, turmeric and sugar to the cut boiling potatoes and tempered with oil and mustard seeds and cook it in pan for 2-3 minutes.
Sides:
Add some jaggery on the side. Both of my kids love to eat bhakhari with little bit jaggery on the side.
Fruits: Orange.

Apple Halwa
Ingredients:
Grated apples......................2 1/2 cups
Ghee.................................2 tbsp
Milk powder.........................1/4 cup
Milk..................................3/4 cup
Sugar.................................3 1/2 cup
Mixed chopped nuts...............1/4 cup
a few drops of vanilla essence
Method:
1. Heat ghee in a heavy bottom pan. Add grated apples in it and cook on a medium flame for 5-7 minutes.
2. Add Milk powder and mix it very well
3. Add milk and cook for another 2 minutes.
4. Add sugar and chopped nuts and cook for another 3-4 minutes until all the water evaporated.
5. Add vanilla essence and serve hot or cool down in refrigerated and serve chilled.

Lunch Box Sandwich - Train.
My son is very picky eater. He just wants only pasta for the the lunch every single day. As he is crazy about trains I made train sandwich for him today.
I use two whole grain bread and made sandwich with peanut butter and grape jelly. Cut it in half lengthwise and arrange it side by side. Cut small cheese square for window and add carrot circles as wheels and "glue" them on the bread with peanut butter and for steam I just cut cucumber in crescent shape.

Indian Bento, Lunch Box , Tiffin Recipe
| I am a very big fan of Bento. Today, I decided to make Bento lunch box for my kids and try to give it an Indian touch. Today's lunch menu is Cocktail Idali, Apple Bunny, Cucumber, Carrot sticks and Grapes. My son was so excited for his lunch box in the morning :). | |||||
