Mixed Vegetale Poha | Kids Lunch box Menu

Ingredients:

Poha............................1 cup
Mixed vegetables .......1 Cup ( Carrot, green beans, edamame, Corn)
Onion..........................1/2 medium (finely chopped)
Potato..........................1/2 medium (finely chopped)
Oil................................1 Tb sp
Mustard seeds..............1 tsp
Cashews and raisin......1 Tb sp
Curry leaves.................4-5 leaves
Turmeric powder.........1 tsp
Chili powder................1/2 tsp
Sugar............................2 tsp
Lemon Juice.................1 tsp
Salt to taste

Method:

1. Wash Poha three to four times and put it aside in colander to drain out the extra water. 
2. In a pan take oil and add mustard seeds in it.
3. When mustard seeds start to crackle add sesame seeds, cashews, raisin and curry leaves
4. Add onion and saute nicely. Once onion changes to light pink color add potato and mix vegetables      and cook until vegetables get soft.
5. Now add poha into the vegetables mixture and add rest of the masala except lemon.
6. Cook for 3-4 minutes until all the masala nicely mixed.
7. Now switch off the flame and add lemon juice and mix properly. Serve hot.

Carrot Pulav | Pulao - Lunchbox Menu Day-3


Carrot Pulav - Its very quick and easy to make and kids will love it. 

Ingredients
Carrot ................shredded 1 cup
Rice....................Cooked 1 1/2 cup
Ghee..................1 Tbsp
Cashews............1 Tbsp
Raisin.................1 Tbsp
Pulav masala..... 1 tsp
cumin seed ........1 tsp


Method: 
1. Take 1 tb sp Ghee in a pan. Add 1 tsp cumin seeds, 1 tb sp cashew and 1 tb sp Golden raisin and saute for a min.
2. Now add carrots in it and cook the carrot for 2-3 mins until it chages color to slight light orange.
3. Now add pulav masala and salt to the carrot mixture and mix everything nicely.l
4. Add cooked rice into the carrot mixture and again mix everything togather until rice will have nice orange color.
5. Now pack it in the lunch box with yogurt. 

Note: This measurement is for two lunch boxes. If you want to make it for one kid adjust the ingredients accordingly.

Peanut Coconut Laddoo | Laddu | Independence day | RinkusRasoi

Ingredients:
Roasted peanut...............................1 cup
Dry coconut powder.........................1/2 cup
Dry ginger powder...........................1 tea spoon ( optional)
Sugar...........................................1/4 cup
Ghee...........................................1 table spoon
Cardamom powder...........................1 tea spoon


Method:
1. Crush the peanut in grinder and make powder.
2. In a bowl mix coconut powder, sugar, cardamom powder, dry ginger powder (soonth  and peanut powder.
3. Add ghee in it and mix very well.
4. Peanut will leave some oil and sugar will mix with ghee and it will form the consistency of laddoo.
5. Make small ball and roll the balls in coconut powder to coat evenly ( you can also add color 1-2 drop of color in coconut powder mixture).
6. Store in a airtight container.

Tuver Dhokali | તુવેર ઢોકળી

Ingredients:


For Tuver-

Tuver dana........................1 Cup
Water............................... 2-3 Cups
Salt to taste

For Dhokali-

Whole wheat flour.................1cup
Tureric powder.....................1/2 tsp
Red chilli powder..................1/2 tsp
Cumin seeds........................1/2 tsp
Oil....................................2 TB sp
salt to taste
water for kneading

For Daal

Oil ,,,,,,,,,,,,,,,,,,,..............1 tsp
garlic finely chopped............1 tsp
Green chili ginger paste........1tsp
Red chili powder.................1tsp
Turmeric powder.................1/2 tsp
Cumin coriander powder........1tsp
Garam masala powder..........1/4 tsp
salt to taste
water 2-3 cups


Method:


For Tuver-

pressure cook tuver dana with salt and water for up to 2-3 whistle and let it cool down

for dhokali-

In bowl take wheat flour, salt, turmeric powder, red chili powder, cumin seeds and oil. Add enough water to form a smooth dough. Keep aside for 15 mins.

After 15 mins take a small amount for dough and pat it in on your palm with the help of the fingures of the other hand to make a small disk shape ( dhokali). Repeat the process with the remaining dough and once you finish with all the dhokalis cover it with cloth otherwise dhokalis will loose its moisture and become dry.

For daal-

In a pan heat oil and once it heated add mustard seeds. As it splutter add garlic and saute for few seconds. 
Now add green chili and ginger paste and boiled tuver dana and cook for 2-3 mins. 
Add 2-3 cups of water and remaining masala and let it simmer for 2 mins. Now add the dhokalis one by one ( make sure not to add all the dhokalis together). Now close the lid and let the dhokali cook for 4-5 mins. Stir 2-3 times in between so dhakali doesn't stick to bottom. After 5 mins switch off the flame and serve hot.
